Pumpkin & Hazelnut Salad with Spiced Yoghurt Dressing
Hazelnuts have so much goodness, rich in vitamins E, B Complex, very high in folate & dietary fibre
Im bringing hazelnuts back with this simple & tasty salad
Ingredients
1kg pumpkin
(peeled, diced)
3 tbs coconut oil
1 cup hazelnuts
300g baby spinach
2 tbs olive oil
Lemon juice
For Dressing
1 cup plain yoghurt
11/2 tsp cumin
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp minced garlic
Dash of lemon juice
4 tbs tahini
Salt & pepper to taste
Toss pumpkin in coconut oil, spread on baking tray & roast for approx 20 mins till just done
Toast hazelnuts in pan then cool
Rub off skin by placing in a tea towel, roll on bench
Mix all dressing ingredients till smooth
Toss spinach, nuts, oil & lemon juice reserve some nuts for garnish
Arrange in bowls or platter, top with pumpkin, drizzle over dressing & extra nuts
Serves 4
