Eating for your Dosha: Cozy Cauliflower & Turmeric Soup

Cauliflower and turmeric come together to create a dish that is not only delicious but also deeply nourishing, aligning perfectly with Ayurvedic principles. This recipe for Cauliflower & Turmeric Soup is a harmonious blend of nutrients and flavour, created to suit all three doshas. The star ingredient, cauliflower, is a versatile vegetable known for its numerous health benefits. Rich in vitamins C and K, fiber, and antioxidants, cauliflower supports overall wellness and aids in digestion. When paired with turmeric, a golden spice revered for its anti-inflammatory and healing properties, this dish transcends ordinary meals to become a therapeutic experience.

  • 1 cauliflower head: cut into large pieces
  • 1/3 butternut pumpkin: peeled and cubed
  • 1/3 sweet potato: peeled and cubed
  • 1/3 leek: cut into half-moon slices
  • 2 tsp turmeric
  • 1 tsp ginger
  • 1 tsp oregano
  • 1 tsp cumin
  • 3/4 can coconut cream
  • 4 cups vegetable stock
  • 1/4 cup almond mylk
  • Oil of choice, salt, pepper to taste
  1. Sauté the leek, ginger and spices in oil until aromatic. Option to switch the leek for onion and add garlic.
  2. Add the chopped vegetables and sear. Add the liquid ingredients, stir and simmer on medium heat until soft.
  3. Transfer the vegetables into a blender with a small amount of the liquid/soup and blend until smooth. Option to mash if you prefer a thicker texture. Gradually add liquid from the pot until you have the desired texture.
  4. Season with salt, cracked pepper, a drizzle of coconut cream and roasted cauliflower.

Cooking options:

  • Roast the vegetables in a drizzle of oil and coated in the spices instead of simmering in the vegetable stock. Once roasted, transfer veggies to a saucepan, add the liquid ingredients and bring the mixture to a boil. Continue from step 3.
  • Add all the ingredients into a pressure cooker for 25-30min depending on your cooker. Continue from step 3.
