Creamy Coriander,Chilli Cashew Dip
Ingredients
1 cup natural greek yogurt
3/4 cup raw or roasted cashews
Juice of 1 lime
Small bunch coriander, chopped
Pinch of ground chilli or chilli paste
Pinch salt
1 tsp onion powder
1/2 – 1 tsp minced garlic
Blend all ingredients in a high speed blender or food processor till smooth & creamy
Adjust amount of chilli, garlic & lime to taste
• For vegan omit yogurt, soak raw cashews at least 4 hrs & use 1 1/2 cups, add enough water when blending till desired consistency
Serve as a dip with your favourite breads,crackers, raw veggies,add a dollop to veggie burgers or as a dressing in ‘Kale Slaw’- just toss it together with finely chopped kale, coursely grated carrot, beetroot & red cabbage
