Berry Chocolate Chia Pudding
*Ingredients
1/2 cup chia seeds
2 cups coconut milk, almond, rice or dairy
3 tbls raw cocoa
200 g mixed berries fresh or frozen
Maple or Coconut syrup – about 1/4 cup you may need more or less to taste
2 tsp vanilla extract
*Mix all ingredients well, can use stick blender. Leave for a few minutes & mix again check that chia has no lumps, mixture will begin to thicken
Leave in fridge for at least 2 hrs or overnight
Serve with extra berries, or flaked coconut, grated chocolate or cocoa nibs
Serves 4
