Raw Carrot Date and Ginger Energy Balls

These would have to be one of the healthiest and most delicious, walnuts are packed full of omega 3 and antioxidants, zingy ginger aids digestion, is anti inflammatory, carrots are loaded with beta-carotene and vitamin A
Have these guilt free treats anytime and enjoy the benefits

Ingredients
2 cups grated carrot
1 tsp fresh grated ginger
12 medjool dates pitted roughly chopped
11/2 cups walnuts
1tsp cinnamon
Dash of vanilla extract
Desiccated coconut

Lemon Cashew Cream

1 cup cashews soaked at least 2 hrs in water
Zest & juice of 1/2 lemon
1heaped tsp guar gum
Honey, maple syrup or sweetener of choice to taste

For the balls blend all ingredients except coconut in a processor till smooth then toss in coconut, they will store well in the freezer

Cashew Cream

In a high powered blender add all ingredients and whip till thick adding water as needed

Top each ball with a dollop of cashew cream
