French Toast with Strawberry Compote & Coconut Yoghurt (gluten free)
We’re a bit late on the pic for Mother’s Day breakfast in bed treats but I happily devoured this and had an afterthought to post today! So save this one up for mum or anyone who deserves a treat.
Beat 2 eggs with splash almond milk, 1/2 tsp vanilla extract and 1 tbsp cinnamon
Soak gluten free fruit toast in mix for a few minutes, turning over in mix
Fry until golden on both sides in coconut oil
Serve with strawberry compote (heat fresh or frozen strawberries with maple syrup) and coconut yoghurt. Heaven!
