Banana, Chia & Cardamom Muffins
Ingredients
- 3 large ripe bananas
- 2 tbsps chia seeds
- 6 tbsp plant-based milk (almond, coconut, cashew)
- 1 cup spelt flour
- 1 cup rolled oats
- ½ tbsp baking powder
- 2 tsp maple syrup
- 2 tsp vanilla extract
- ground cardamom for sprinkling on top of muffins
- coconut oil for greasing muffin tray
Instructions
- Preheat the oven to 180C. Use muffin papers or grease muffin tray with coconut oil
- Place bananas, chia seeds, milk, spelt flour, oats, baking powder and vanilla in food processor and blend until well combined
- Spoon the batter to muffin tray (makes approx 6 large or 10 small muffins). Smooth the surface to make sure batter is evenly distributed.
- Sprinkle ground cardamom on top of each muffin.
- Bake in the preheated oven for 30-35 minutes or until an inserted butter knife come out clean.
- Serve as they are since the muffins are moist or with coconut oil and jam (chia jam is a great option)
