Banana, Chia & Cardamom Muffins

Ingredients

  • img_02253 large ripe bananas
  • 2 tbsps chia seeds
  • 6 tbsp plant-based milk (almond, coconut, cashew)
  • 1 cup spelt flour
  • 1 cup rolled oats
  • ½ tbsp baking powder
  • 2 tsp maple syrup
  • 2 tsp vanilla extract
  • ground cardamom for sprinkling on top of muffins
  • coconut oil for greasing muffin tray

Instructions

  1. Preheat the oven to 180C. Use muffin papers or grease muffin tray with coconut oil
  2. Place bananas, chia seeds, milk, spelt flour, oats, baking powder and vanilla in food processor and blend until well combined
  3. Spoon the batter to muffin tray (makes approx 6 large or 10 small muffins). Smooth the surface to make sure batter is evenly distributed.
  4. Sprinkle ground cardamom on top of each muffin.
  5. Bake in the preheated oven for 30-35 minutes or until an inserted butter knife come out clean.
  6. Serve as they are since the muffins are moist or with coconut oil and jam (chia jam is a great option)
